Spherification & Clarification

This course covers two distinct but related techniques in advanced bartending preparation. Both are derived from molecular gastronomy and can add a higher level of quality, intrigue, and value to a cocktail. Spherification is the process of producing liquid-filled bubbles that can be added to a cocktail. This course also covers two different ways to do clarification, which is to remove fiber from a liquid to produce a smooth and clear result.



All materials, such as tools and equipment, will be provided at no additional cost. Students are required to bring a small notebook and pen to class and are expected to take notes throughout. Course handouts and study guide will also be provided to each student.

Each class is 2 hours. One class will be held once a day over 3 consecutive days. The total time required is 6 hours.

Class 1: Monday, May 1, 2017; 12:00-2:00pm
Class 2: Monday, May 8, 2017; 12:00-2:00pm
Class 3: Monday, May 15, 2017; 12:00-2:00pm
Class 4: Monday, May 22, 2017; 12:00-2:00pm

The course and all its materials will be administered in English.

The course fee is 8,000 THB. Payment must be made in full via bank transfer or onsite no later than 1 week prior to start of course.

About the Instructor

Originally from just outside Liverpool (England) Mark heads up the bar at J.Boroski Bangkok. He daily ensures that all cocktails are custom-made using the freshest homemade ingredients, the best spirits, and a variety of intensive preparation procedures. He recently worked as the brand ambassador of Snow Queen vodka and has previously placed as second best bartender in Europe by Jameson, as well as placing highly in several other competitions in the UK. Mark's attention to detail, high focus on guest service, and complete immersion in the bar industry make him an ideal instructor for a number of bar courses.
